Humm Kombucha Introduces Hopped Grapefruit
We love it when a plan comes together.
The inception of Humm’s newest flavor came when Humm’s resident lab wizard, Elysse Boarman, conceived of a Brewer’s Batch of Raspberry Hops. Brewer’s Batches are what we call our experimental flavors, and typically they only receive a limited run in the brewery and the tasting room. If you’re not there on the right day, you might never get a chance to try these special brews!
A note on Brewer’s Batches: Every two months, Humm partners with a different local non-profit and donates a portion of the proceeds from our current Brewer’s Batch. So part of every fill goes back into the community.
Elysse’s concoction was delicious, and it sparked the brains of all of Humm’s brewers to come up with a way to best use hops in combination with other flavors. Bend is a big beer town, and many of Humm’s brewers dabble in home brewing on the side, so working with hops was second nature. A bounty of leftover grapefruit juice from another project gave the brewers a canvas to work with and they set to making the hoppiest, most grapefruity kombucha possible.
The resulting kombucha is an aromatic, delicately-layered beverage that perfectly blends the crisp taste grapefruit with earthy Cascade hops and fruity Citra hops. It debuted as a Brewer’s Batch – just a one-time deal – but this batch was getting attention. Everyone who tried it liked it. Bend really likes its hops! The brewers were stoked, customers were bummed when the batch ran out and employees were scrounging for bottom of the barrel growler fills.
It was such a hit that it soon became clear that Hopped Grapefruit needed to become more of a permanent flavor on Humm’s roster. Brewers at Deschutes Brewery helped Humm’s brewers find the perfect hops for the blend. The brewers continued to experiment, working with the hops, juice and kombucha to create something that had never been made before. Through trial and error, the brewers found out how to get the most flavor from the hops without leaving them in too long, which could make the beverage bitter. The time put in paid off in perhaps Humm’s more interesting, complicated flavor to date.

Recipe: Hopped Grapefruit Greyhound
(for one drink)
1.5 oz of Vodka
Iced Humm Hopped Grapefruit Kombucha
Fresh grapefruit juice (optional)
Sliced grapefruit for garnish
Fill a lowball glass with ice, and pour in the vodka. Fill the rest of your glass with Hopped Grapefruit Humm Kombucha. If you want an extra grapefruit pucker, add in a squeeze of fresh grapefruit and garnish with a grapefruit slice.
Is a salty dog more your style? Try salting the rim of your glass and swap the vodka for gin.
